Recipe from Breadfruit for Appleton Rum Sea Scallops

Breadfruit and Rum Bar is on our top places to dine in downtown Phoenix and certainly our favorite Jamaican influenced restaurant in the Valley. We asked Dwayne if he’d contribute something special and boy did he. Breadfruit’s famed Appleton Scallops. Below is the complete recipe as they prep and cook it.

The Breadfruit’s Famed Appleton Rum Sea Scallops

Things you will need:

  • Cast Iron Skillet
  • Extra Virgin Olive Oil (EVOO)
    • *to lightly coat cast iron skillet
  • 4 LG Diver Scallops (U8)
    • *Rinse scallops in lime & water. Pat dry
  • 1 Stalk Scallion
    • *Cut into quarters
  • 1 Red Potato
    • *Slice thinly
  • 4 Large Basil Leaves
    • *Torn
  • 1 OZ Appleton Estate V/X Rum
    • *Plus how much more you’d like to drink!
  • 1 tsp. The Breadfruit’s Jerk Rub
    • *Available @ The Breadfruit

The Directions:
Over a high flame warm your cast iron skillet. Add EVOO and let your pan get just hot enough to smoke.
While heating skillet, dredge scallops in rum & jerk rub. Rub your potatoes in the remaining rum/jerk rub mix.
Carefully place scallops in hot skillet. DO NOT MOVE. Add potato. Wait 2 minutes. Flip scallops. DO NOT MOVE. Add remaining vegetables. Wait 2 minutes then remove promptly from skillet.
